Introduction
"Green coffee" refers to the raw or unroasted seeds (beans) of Coffea fruits. In the typical roasting process of coffee beans, a chemical called chlorogenic acid is reduced. It's this chemical that is thought to be responsible for several health benefits, including weight loss.
Green coffee beans are simply beans that haven’t been roasted.
Plant Anatomy
Green Coffee Bean Extract is made from the green beans of the Coffea Arabica plant. There are two types of coffee plants, arabica and robusta. The arabica is higher in quality and higher in chlorogenic and caffeic acids, two primary compounds responsible for anti-oxidant activity.
Green Coffee is an attractive small tree or shrub with dark glossy evergreen leaves. It prefers light shade and some varieties can grow into large trees. The flowers are white, star-like, fragrant, in axillary clusters which appear in the spring. The fruit are red when ripe, in the fall, with a sweet pulp surrounding the bean.
Cultivation & harvesting
Ideally, Arabica coffee beans are grown at temperatures between 15–24 °C (59–75 °F) and Robusta at 24–30 °C (75–86 °F) and receive between 15–30 cm (5.9–11.8 in) of rainfall per year. Heavy rain is needed in the beginning of the season when the fruit is developing, and less later in the season as it ripens.
